A guide to steam cooking
On the menu ▾
Give your vegetables the care they deserve - keep them crisp, moist, and packed with nutrients. Steaming cooks them gently, locking in vitamins and flavours for healthier, tastier dishes.
Wellbeing starts with what you eat, and steaming is making a comeback in our kitchens, driven by a desire to eat better without sacrificing taste.
From utensils, techniques, and tips - this is your guide to reviving this timeless cooking method.
Why cook on steam?
Steaming is like the Swiss Army knife of cooking - versatile and efficient. Nearly any food can be steamed, making it a healthy, easy-to-use method perfect for daily meals or healthy batch cooking.
Let's explore how you can make it part of your kitchen routine!
Advantages of steaming
Steaming is a quick and straightforward way to cook. This method uses steam to gently cook food without causing damage. For crunchy vegetables, perfectly tender fish and meat, and fluffy, soft grains.
No need to add fat - the flavours are already perfect. And the best part is, you can’t burn your dish! This makes steaming ideal for beginners, busy cooks, and chefs focused on creating healthy meals.
Steaming cooking for healthy cuisine
When it comes to nutrition, steaming works wonders. Unlike boiling, which leaches out water-soluble vitamins (such as vitamins C and B), steaming preserves up to 30–50% of the good stuff.
Steaming is the ultimate go-to for healthy eating. It's perfect for special diets like anti-inflammatory or hypotoxic plans, ideal for those with food intolerances, the elderly, babies, and even athletes.
Simply put, it’s for anyone looking to boost vitality and health while still savoring delicious, flavourful meals, with no extra fat required!
How does steam cooking work?
Steaming is an easy, fast cooking method perfect for both beginners and seasoned cooks. As water in the pan heats up, it turns to steam, which surrounds the food in a perforated basket above.
Since the food doesn’t touch the water, it cooks gently at around 95 to 100°C, helping to preserve heat-sensitive vitamins.
The importance of water in steam cooking
Water is, of course, the key ingredient here, even if it doesn't end up on your plate. It influences the quality of the steam and therefore the taste of the food.
How much water should you use?
You only need enough to generate steam without the pan or cooker running dry in the middle of cooking. Generally, you should have 2 to 5 cm of water in the bottom of the pot or pan.
⚠️ Caution: Check the water level carefully before starting a long cooking cycle.
What type of water should you choose?
The ideal choice is water with a low mineral content (such as filtered or spring water). This is especially important if you’re in a hard water area!
➡️ Tip: If you want to add a twist to your recipes, add stock to your water or fresh herbs to subtly flavour your dishes.
Steaming utensils
You might already have a simple kitchen tool that lets you start steam cooking without much effort or extra expense.
Steam cooker
This is the most well-known option. Electric steamers are quite practical: add water to the base, stack the baskets and start cooking.
Some models allow you to keep food warm. Plus, you can cook a complete meal in the different baskets all at once.
The steamer basket
Do you already have a casserole dish in your kitchen arsenal? Good news: you can steam your food by adding a little water to the bottom and placing a steaming tray or basket on top. Don't forget to close the lid!
Steaming in a large pan.
If you have a high-sided pan with a tight-fitting lid, take advantage of steam cooking by using a steamer basket that fits your pan.
Our Fabulous All-Purpose Pan comes with its own steamer basket, ideal for minimalists or those with limited space who want to do everything in one utensil.
THE FABULOUS PAN
The steam oven
The steam oven is the luxury version of steam cooking. It allows you to precisely adjust the temperature and humidity level. Some models can also combine steam and convection heat to make food tender and crispy.
You can cook a variety of moist dishes or reheat meals without worrying about them drying out. While this oven requires a bit of an upfront investment, it delivers ultra-precise results without the need for constant monitoring.
Tips for steaming without an appliance
If you don't have any of these utensils and still want to try steam cooking, you can do so with a few tips and a little ingenuity.
- Don't have a steamer basket? Place your food in a metal colander. Stack it on top of a deep saucepan so that it doesn't touch the water, then put the lid on and let the steam do its work.
- The microwave can also be used as a steamer. Place your vegetables in a salad bowl with a little water, cover with cling film, leaving an air hole. The heated water will release steam that will cook the vegetables. That's it!
The steamer basket: an essential tool
Stainless steel steamer basket
By choosing a stainless steel steamer basket, you are opting for a sturdy, easy-to-clean material. This material is stable when exposed to heat and poses no risk of particles migrating into your food. It is dishwasher safe and highly resistant to corrosion. This is a useful feature for a utensil that comes into direct contact with moisture.
Bamboo steamer basket
More traditional, the bamboo steamer basket is a must-have in Asian cuisine. It adds an authentic touch to the presentation of your dishes. You can stack up to three bamboo baskets on top of each other and multiply your preparations. Super practical!
Wood is a healthy but porous material that must be cleaned by hand. Avoid using washing-up liquid, which could soak into the basket and into your food the next time you cook.
➡️ Tip: line the bottom with a cabbage leaf or aromatic herbs (which will also flavour your dishes) to prevent the food from sticking to the bamboo.
How to use a steamer basket?
- Start by bringing water to a boil in a pot.
- Place the basket above the water without letting it touch the water.
- Add the food in a single layer and cut into equal sizes for even cooking.
- Cover with a suitable lid.
- Cook over low or medium heat, keeping an eye on the water level.
Steaming temperature and time
Steam cooking is gentle yet highly effective. By cooking food at temperatures between 95 and 100°C, there's no need for excessive heat - moderate steam gets the job done perfectly.
Here are some guidelines based on the foods to be cooked:
- Green vegetables: 4 to 6 minutes (crisp to perfection)
- Potatoes: 15 to 25 minutes depending on size
- Fish: 6 to 10 minutes depending on thickness
- Chicken pieces: 15 to 20 minutes
Choosing the right foods to steam
Herbs and spices for added flavour
Steaming doesn’t have to be boring - just get creative with herbs and spices! Bay leaves, thyme, oregano, rosemary, basil, curry, cumin, or even ras el hanout can add a punch of flavour to your dishes without any added fat. It’s a healthy, nutrient-packed way to cook that’s far from bland. Give it a try, and you might just fall in love with it!
